Guajillo Chilli

The guajillo chilli, a staple in Mexican cuisine, is a versatile and delicious pepper with a mild-to-medium heat and deep, complex taste. Dried, dark-red in colour, and with a smooth, shiny skin, guajillos can be used as whole pods, flaked or as powder.

With a Scoville heat rating of 2,500 to 5,000, guajillo chilies are fairly mild. They offer a warm, fruity flavour profile with hints of tangy undertones, reminiscent of cranberries or green tea.

Guajillo peppers are a key ingredient in many Mexican dishes, including salsas, sauces, and stews. They provide both colour and depth of flavour, acting as a robust base for adobo sauce, mole and many other dishes. Their mild-to-medium heat allows them to be used generously without overwhelming the dish.
